Achari paneer masala is one of the most rustic and charming paneer recipe which has incredible flavors with a nice amalgamation of spices. It will bring alive all the taste of pickles and will surely tantalize your taste buds. The flavors of this achari or pickled paneer tikkas will appeal to developing and developed tastes alike. For the Achari masala:
split yellow mustard (rai ka kuria) or 1.5 tsp whole mustard seeds
fennel seeds/saunf
nigella seeds/kalonji
fenugreek seeds/methi
dry red chilies, deseeded and broken into small pieces
For the gravy:
very finely chopped onions
finely chopped tomatoes
crushed garlic
finely chopped green chilies
tamarind paste
dry red chilies
achari masala
garam masala
oil
Salt as per taste
For the paneer tikkas:
paneer/cottage cheese, sliced into cubes or square
medium capsicum/bell pepper (red or green or yellow), diced
medium onion, halved and the layers separated
medium tomato, diced (optional)
full fat hung curd
corn starch (corn flour)
garlic cloves + 1 piece ginger,
dry mango powder
turmeric powder
coriander powder
red chili powder
crushed kasuri methi
a pinch of hing
mustard oil, preferred or any vegetable oil
Salt as per taste
