This tilapia recipe is adapted from a dish I found in a book about French Bistro cooking. It was featured in a section on La Cafetiere bistro in Paris. French bistro cooking is some of the best, and usually, it’s relatively simple and inexpensive. The recipe was originally intended for sole, but works well with tilapia or almost any light, delicate fish like catfish or even trout.
