Let’s spice things up a bit. Creamy, spicy and fresh yellow curry for a Friday lunch, and it is fast too. I was really hungry, but A. was busy planning her wedding. Every single detail needs to be carefully planned and perfect. I get it, it’s her wedding. So I raided her kitchen, found coconut milk and curry paste (I instantly knew what I wanted to make). I sliced up a bunch of vegetables, grated some fresh ginger, cooked some rice and made a delicious lunch for two. Great thing about curries is you can use whatever vegetable combination you want, add some potatos, or as we did, some leftover cooked chickpeas.
