My goddaughter is a genius. This chocolate and peppermint ice cream sandwich recipe was a group effort between my goddaughter (Angelina), her little sister (Alanna), my mom, Carla and me, but Angelina really deserves the credit for this one. We were hanging out one night when the following conversation happened:
