ust think about it, creamy cauliflower, tender chicken and potatoes delicately flavoured with thyme and finished with fresh Parmesan cheese. Need I say more, really how delicious does this soup sound? I always double this soup recipe because it freezes well. I freeze the soup in small portions and that way I always have my favourite soup on hand. I must admit cauliflower is my favourite vegetable. Not only because it is super healthy and low in calories, but because it cooks quickly and makes everything taste yummy!!

Fourth of July is this week and I’d say that it’s officially popsicle season. Orange creamsicles are one of my favorite frozen treats and the ZOKU Quick Pop Maker is one of my favorite gadgets. Being able to make pops in 10 minutes makes for a fun experience when you have dinner guests. These orange creamsicles use coconut milk instead of heavy cream, and they are oh so creamy and delicious
Thin almond layer, topped with creamy cherry mousse, covered in chocolate and crispy caramelized almonds.
This mini cherry mousse torte is delicious, light and beautiful.
I can’t say that this recipe is quick, but it’s easy, plus, you can do the work in parts – you could bake the almond layer a day in advance and cook the cherries a day ahead, too. The next day you can finish the mousse and assemble the cakes. To additionally ease your work, you can make one big cake instead of mini cakes, it’s up to you!
Bottom line is that these cakes deserve every minute spent in the kitchen, simply because they are heaven!
