There is something about homemade jerk chicken that leaves a fiery tingle on your lips and enough Jamaican flavour to keep you coming back for more! Hot scotch bonnet chilli’s, thyme, allspice and a bucket of love… Jerk chicken sings of summer bbq’s and winter days done in the oven – you can’t eat it without smiling! This is a great dish to make and save some of the marinade in a jar in your fridge and use sparingly on other foods as seasoning (works well on pork chops or even a very light salad dressing with a kick!)
