Ingredients

Veggie broth

Olive Oil - 1 tbsp

red Crushed pepper - 1 tsp

Onions dried/fresh cut (1/2 cut into small pieces) - 1 1/2 tbsp

Garlic powder - 1 1/2 tsp

Green peas - 1/2 cup

potatoes - 1/2 cut into small pieces

Green pepper - 1/2 cut into small pieces

baby Carrots - cut into small pieces - 6

Cherry tomatoes - 5 cut into halves

Pasta - spiral or mini penne - handful

Tom yum Paste - 1 tbsp

Cooking Procedure

n Vegetarian's please make sure to check if that the paste does not have shrimp/oyester/fish extract in it.nn This is the brand i used : http://store.indianfoodsco.com/shop/tom-yum-thai-paste-hot-sour-mix-soup-thcs130nn How to make it?n Very simple - Dump in all the above ingredients and you are good to go :-)..thats not what i meant..n n In a pan add Olive oil, once its hot add red crushed pepper and garlic powder, then add onions, if dry you can add potatoes right after, else let the onions cook a little bit.n Then add carrots, roast for about 3-4 minutes.n Now add the broth. Once its a little hot, add all veggies and pasta and the tom yum paste.n Let it boil, once it boils reduce the heat, cover it up and let it sit for about 5-7 minutes so all veggies and pasta will cook.n Turn the heat off and keep it for another few minutes. Your soup is hot and ready!n n Variations:n Add tofu for veggie proteinn Add shrimp if you prefer seafood instead.nn Use Chicken broth if you prefer a not vegetarian receipen If you prefer a light soup, just tofu/peas and carrots work wondersn You can also add celery and remove potatoes/pasta if you prefer low carb soup.nn  n
