Ingredients

1 Cup Whole Wheat Flour/ Atta + more for Dusting

1/2 Cup Grated Zucchini

1/4 Cup Grated carrot

2 Tablespoon Finely Chopped Coriander or cilantro leaves

1 - 2 teaspoons Sesame Seeds

1/2 Teaspoon Cumin Seeds (Jeera)

1/4th Teaspoon Ginger garlic paste

Pinch of Redchilli Powder/ Cayenne pepper or as per taste

Salt to Taste

aste 2 - 3 Tablespoons Oil

organic cream cheese/ cheese spread as per taste

Cooking Procedure

n 1. Mix all the ingredients except oil and cream cheese. nn  nn 2. To the wheat flour mixture add 1 tablespoon oil. Mix all the ingredients well to form a smooth dough. Use water as required to form the dough, beacause sometimes only water from the vegetables will be enough to knead the dough. Knead it for 2 more mins.nn  nn 3. Cover and let it rest for 15- 20 minutes.nn  nn 4. Heat Tawa or skillet on medium heat.nn  nn 5. Knead the dough again for 2 mins and divide into large lemon size balls.nn  nn 6. Start rolling the balls into rotis by adding dry whole-wheat flour.nn  nn 7. Place the prepared roti  onto the hot tawa, turn the roti over when you see bubbles appear on the surface.nn  nn 8. Apply oil on the surface and let it cook for  few seconds, flip again and apply oil to the other surface.nn  nn 9. Press on the edges with a spatula and cook till both the sides are well cooked. It will just take around 1 to 1.5 mins each side to cook. Repeat the process with rest of the dough.nn  nn 10. Take the roti on a plate and apply cream cheese on one half and fold the other half on it. nn     Cut this into two triangles. nn  nn Note: nn 1. Different kinds of vegetables can be used in the roti like bottle gourd, cabbage or spinach puree, or herbs like fenugreek (methi), coriander (cilantro) or mint etc.nn  nn 2. You can also add grated cheese as filling, just add the cheese immediately you take it out from the heat.nn  n
