Lemon Chicken Skillet with Veggies and Potatoes I love cooking with cast iron skillets because they are an ideal choice for meats and other foods that need high heat. If you are cooking with healthy oils, onions, garlic, spices or peppers these skillets do wonders for transferring the flavors around.. potatoes are a testament to this as they hold in all of those flavors inside while the outside gets nice and crispy. If it’s not too formal an occasion, I also like serving right from the skillet (as they often do in breakfast joints).
