Soft and fluffy eggs stir-fried with sweet, tangy tomatoes that go perfect with steamed white rice and ready in less than 15 minutes!

Ingredients

3 Eggs

1 medium Tomato

1-1/2 tablespoons Sugar

ΒΌ cup Water

pinch of Salt

2 tablespoons Vegetable oil

Cooking Procedure

n n Dice the tomato and set aside.n n In a medium bowl, beat the eggs and throw in the pinch of salt to slightly season.n n You are now ready to start cooking - heat up the oil in a pan and throw in the diced tomatoes, saute for a couple of minutes before adding the sugar and water, let the mixture simmer until the water has lessened to half its original amount.n n At this point, pour the egg mixture over the tomatoes and start stirring and folding the mixture consistently.n n After about a minute, turn the fire off and transfer the completed dish immediately onto a platter.n n Serve with steamed white rice and enjoy!nn
