Scrambled egg masala curry is one of the best side dish for crispy dosa, chapati or poori. It is a very easy and quick scrambled egg recipe. It is an Indian style of making scrambled eggs with onions, tomatoes and spices. Just give a try and enjoy as a side dish for roti,naan,kulcha or any other Indian bread.

Ingredients

Egg – 4 no’s

Onion – 3 medium

Tomato – 1 big or 2 medium sized

Garlic – 8 cloves

Ginger – 1/2 inch

Clove – 2 no’s

Cinnamon – 2 small pieces

Fennel seeds – 1/4 tsp

Coriander powder – 1/2 tsp

Chilly powder – 3/4 tsp

Turmeric powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Kasuri methi – 1/2 tsp

Salt to taste

Oil to fry

Coriander leaves for garnishing.

Cooking Procedure

n Procedure –nn Heat a pan by adding 2 tsp of oil in it, when it is hot add 2 onion cut into medium pieces,chopped tomotoes,ginger,garlic and spices except dry powders and fry till it turns to translucent and set aside.nn Allow the mixture to cool.nn Add all the ingredients into a mixer jar and blend to a paste by adding water into it and keep ready.nn In the same pan heat oil, when it is hot add 1 chopped onion and coriander leaves into it,fry until it turns to translucentnn Break eggs one by one and add it to the mixture,crumble it, stir fry until it is done.nn Add salt to tastenn Add blended paste into it and stir frynn Add all dry spices into it and mix altogether.nn Add 1/2 cup of water and bring the curry to boil for 5 min to a thick consistency.nn Add kasuri methi and mix properly.Remove from the flame.nn Transfer the dish to a serving bowl,garnish it with fresh chopped coriander leaves and enjoy with any Indian bread:)n
