Costa Rican style salsa- great as a marinade, dip or topping!
Ingredients
2 dried chilis, deseeded
1 cup vegetable stock
1/2 yellow onion, chopped (1/2 cup)
1 5" carrot, chopped
2 TB sugar
2 TB lemon juice
1 TB vinegar
1 TB cumin
1 tsp salt
1 tsp black pepper
2 tsp molasses
1/2 tsp mustard powder

n In a small saucepan, add the chilis and vegetable stock. Simmer about 15 minutes until the chiles are soft.nn To a blender, add the remaining ingredients, along with the chilies. Puree until smooth.n
