When the weather turns colder, there's nothing like warming up with a hearty, velvety smooth, bowl of healthy and incredibly delicious soup! This soup has so much depth of flavor and ingredients, that I had a rough time coming up with a suitable name! I seriously had to simplify it to what I did, but there's more veggies than just the cauliflower. The color can be a bit deceiving, as one might think that it has cheese in it- but it doesn't! (Of course, you could totally add some if you'd like!) The golden color comes from the carrots, caramelized leeks, dash of tumeric, and (of course), the "roasted" cauliflower. This is a pureed soup- which lends to the creamy texture. I personally didn't feel the need to add any cream to this, but if you wish to add a bit more richness, feel free! In addition to the cauliflower, there is also roasted parsnips, carrots, garlic, leek, chopped fresh purple leaf kale, wild rice, (as a time saver, I purchased a pouch of already cooked "Simply Balanced" wild rice!). I garnished this soup with some cooked & chopped turkey bacon, (to add a bit of salty/ smoky essence!) ****The bacon is completely optional of course- as is the wild rice! This is not a terribly time consuming soup to make, and is pretty quick to actually throw together, and makes for excellent leftovers as well! (About a half hour of total cooking time!) This soup is a meal in itself, and goes perfectly with some fresh bread or rolls, and/or a salad.
