About Recipe

Cripsy chocolate cookies with bitter orange jam. Recipe for large portion of cookies. Gluten free.

Ingredients

1 cup (200g) butter or vegetable substitute

½ cup (80g) icing sugar

1 large egg

1 1/2 cup (320 g) gluten free flour (I use 150 g of corn flour and 170 g of BMM recipe here)

1 tsp baking powder (gluten free)

100 g of dark chocolate (gluten free)

150 ml jam of bitter orange (gluten free)

Cooking Procedure

n Melt the chocolate in a water bath, leave to little cool. In a bowl sift flour with sugar and baking powder. Add the egg, butter and chocolate – kneading dough.nn The dough wrapped in plastic wrap and put in the fridge for about 40 minutes. Table tab sprinkle with a little flour (preferably potato flour). Preheat oven to 360F (180C), the mold lined with baking paper.nn Divide the dough for 4 pieces, each roll for 3 millimeters. Cut cookies and put on baking paper. Try to cut cookies in pairs, in one cutting the hole. The remnants dough roll again, until we run out of dough.nn Cookies bake about 10 to 12 minutes. Cool it on wire rack. Then glue two cookies by the jam. In my opinion, chocolate cookies are the best on the second day.n
