Gluten Free Chocolate Chip Cookies made with homemade almond flour! Did I mention I used honey instead of sugar ;) These cookies are super healthy but oh do they taste good! ps. Recipe adapted from the CHOCOLATE CHIP COOKIE recipe from the BeachBody’s FIXATE cookbook

Ingredients

3 cups almond flour

1 tsp baking soda

0.25 tsp salt

0.25 cup honey (you can use maple syrup as well)

0.25 cup melted coconut oil

eggs (1 L egg + 2 L egg whites)

1 tsp vanilla extract

0.50 cup dark chocolate chips

Cooking Procedure

n n Pre-heat the oven at 375ºC.n n Line two baking trays with parchment paper and set aside.n n Combine the almond flour, baking soda and salt in a bowl and set aside.n n Beat coconut oil and honey in a large bowl with a whisk for about 3 - 4 minutes (until creamy).n n Add egg, egg whites and vanilla extract and whisk for a further 2 minutes.n n Add the almond flour mixture to the egg mixture until blended.n n Add chocolate chips just until blended.n n Drop tablespoons full on the prepared baking sheets. Flatten cookies with a spatula if traditional cookie appearance is desired.n n Bake for 14 - 16 minutes or until golden brown.n n Store in an airtight container.nn
