Ingredients

4 cups amaranth,chopped leaves along with tender stems.

2tbsp moongdal.

2tbsp oil.

1/4cup chopped onions.

1 red chilli.

4 or 5 curry leaves.

1/2 tsp each cumin and mustard seeds.

salt to taste.

pinch of turmeric.

1 tsp chilli powder.

Cooking Procedure

n 1.Soak moongdal in water for 15min and microwave for 2min/boil in water.nn 2.Heat oil in a pan,add red chilli,cumin and mustard seeds,curry leaves,onions.nn 3.Drain water and add  moong dal to it and fry for 2 or 3 min on medium heat.nn 4.Add amaranth leaves,salt, turmeric.nn 5.Mix well,cover and cook on low heat till all the water is absorbed.nn 6.add chilli powder and fry till the curry becomes dry.nn 7.Serve with roti or rice.n
