I've been on a bit of a hiatus, so I apologize for not posting the last couple weeks! (School hasn't officially even started yet here, but between vacation and other events, things have already been crazy! That, and I think my brain needed some r & r...lol!) Anyhow, a few weeks ago when my sister Cassie came for a visit, she brought with her a few organic, (and rather large), homegrown zucchinis from her garden. Now, if I'm going to make anything with zucchini, I truly don't want to have to purchase those tiny, wee little zucchinis in the grocery store! (They're awful cute, and great for slicing and sauteing, but that's about it in my opinion!) Zucchinis are just so versatile. So many savory or sweet options for recipes! I've decided to go the savory route, and have recently made some stuffed zucchini with the larger ones, and so I used my last one to make some of these super easy homemade raviolis using won ton wrappers. No pasta making skills or tools required here! Won ton wrappers work so well for ravioli because they are already the correct thickness of dough, and can be boiled, sauteed, baked, and/or fried. Plus, they are precut, and incredibly easy to use! You can also serve these with or without meat, with any pesto or pasta sauce, or even just a drizzle of olive or grapeseed oil. These are simply divine- the delicate pasta filled with the aromatic flavors of the tender garlic and zucchini, artichoke hearts, the "punch of flavor" and pop of color with the sun dried tomatoes, and velvety smooth ricotta and parmesan cheese.....heavenly! I served mine with a simple butter sauce with parsley and walnuts- which amped up the flavors even more. Trust me, your family, (and/ or guests), will truly think you slaved in a hot kitchen for hours making these delicate pockets of deliciousness!
