I’m so excited to be sharing farmers’ market recipes again here at Let’s Dish. There were a lot of fresh greens to choose from this week at my local market, and ultimately I ended up bringing home some baby spinach. It’s one of those veggies I can add to almost anything and my kids will eat it without complaining. And I love having baby spinach handy for mixing up quick salads during the week–especially if I’m craving a light, healthy lunch.

Ingredients

Alfredo sauce

shredded mozzarella cheese

shredded Parmesan cheese

cherry tomatoes, halved or quartered

spinach, chopped

Salt and pepper
