As in most parts of the country, it's been darn cold here...commence the chili cravings. I love making chili because a. it's super easy, b. only uses one pot, and c. it's very customizable. Since it's a weeknight, I went with a healthier chili. This is my version of white chili, combining and modifying different recipes. Mashing a can of beans makes it thicker, and the sour cream adds a creaminess without using fat. Bring it on winter.

Ingredients

boneless skinless chicken breasts

salt

olive oil

garlic

green chilies

chicken stock

ground cumin

ground coriander

dried oregano

red pepper flakes

great northern beans

bay leaves

fat free sour cream

lime juice

Shredded cheddar and monterey jack cheese, optional

cilantro (optional)

Diced avocado ( optional )
