In anticipation of the first day back at school, this weekend my daughter and I invented a simple, delicious granola bar as her perfect recess snack. It’s perfect for her because it’s sweet, filling and quick to eat in her short break (she still has time to play tag). It’s perfect for me because it’s a whole foods bar with no added sugar; it’s full of fibre; and is nut-free (per her school’s policy).

Ingredients

mashed ripe banana

rolled oats

sunflower seeds

pumpkin seeds

hulled hemp seeds

raisins

apricots, diced

medjool dates, pitted and diced
