A gorgeous refreshing drink reminds me of making my own Sugar Cane drink in a little village in Bolivia on the edge of the Amazon – my uncle Mikes version from a house in North London might not have the view but tastes just as great! The flavours of sweet jaggery, sharpness of lime is perfect – and while in the jungle in Bolivia that’s exactly how you make it – pure sugar cane juice and a squeeze of lime (with the odd bug for something to chew on!). This is an ideal summer drink that is a real pick-me-up on a summer’s day, if you wanted to turn this into a cocktail a shot of white rum (or Tequila) might work but haven’t yet tried it!
