Healthy Chutney to start the day with all the benefits of omega 3 fatty acids.

Ingredients

1/2 Cup Fresh or Frozen Grated Coconut

1/2 Cup Walnuts soaked in water for 5 - 6 hrs

3 - 4 Greenchillies or to taste

1 inch Piece Ginger

Handful of Fresh Coriander (Cilantro)Leaves

Marble Size Tamarind seperated and cleaned or 1/2 teaspoon Tamarind Paste.

Salt to taste

1 Tablespoon Oil

1/2 Teaspoon Cumin Seeds

1/2 Teaspoon Mustard Seeds

Few curry Leaves

Pinch of Asafetida(hing)

1 Dry Red Chilli

1 - 2 Teaspoons Black Gram (Urad Dal)

Cooking Procedure

n 1. Add the coconut, walnuts, green chillies, ginger, coriander leaves, tamarind  and salt to a blender or grinder and grind to a chutney consistency by adding water as required.nn  nn 2. Heat a small pan on medium heat, add oil.nn  nn 3. When oil is hot add the black gram, mustard seeds, cumin seeds, red chilli, pinch of asafetida and curry leaves. Fry for few mins till black gram starts to change color and mustard seeds and cumin seeds starts to crackle.nn  nn 4. Add this seasoning to chutney and mix well.nn  nn 6. This chutney goes well with any kind of idli, dosa or vada.nn  nn Alternate Method:nn  nn  You can fry all the ingredients in the step one individually in little oil. This is optional. I prefer them using raw.n
