Ingredients

2 cups chopped mixed vegetables (carrots, beans, potatoes, green peas, corn)

2 cups vermicelli (semiya)

whole garam masala (1/4 teaspoon shahijeera, 1/2 inch piece cinnamon stick,10 kababcini, 3 cardamoms)

1/4 cup sliced onions

1 green chili chopped

8 curry leaves

1 tablespoon finely chopped mint leaves

1 tablespoon finely chopped coriander (cilantro) leaves

2 cups water

2 tablespoons oil

1/2 teaspoon salt ( or as per taste)

1/2 teaspoon gingergarlic paste

Cooking Procedure

1. Fry the vermicelli in half teaspoon desi ghee (clarified butter) till it turns light brown in color. This is an optional step.2. In a frying pan heat oil on a medium heat, add the whole garam masala, when they starts to crack add the curry leaves, green chilies and onions.3. Fry the onions till they turn light brown in color, lower the gas to medium low, add the vegetables and and mint leaves, fry for 2 mins.4. Add the ginger garlic paste, fry for 30 secs.5. Add the water, salt and bring it to a boil on medium high heat.6. Add the vermicelli, when it starts to boil, simmer the gas and cook till all the water evaporates.7. Add the coriander leaves and mix well, turn off the gas.8. Squeeze some lemon juice on top and serve hot.
