Ingredients

3 whole Zucchini

1 Pound Ground Turkey/ Chicken/ Soya granules/ Paneer/ tofu/ Sprouts/ Cooked Beans

2 Tomatoes Chopped

1 Cup Chopped Onions,

1/2 Cup Chopped Bell Peppers

2 Tablespoons Olive Oil

1 Teaspoon Ginger Garlic Paste

1/2 Teaspoon Cumin Powder

1 Teaspoon Coriander powder

1 Teaspoon Redchilli powder/ Cayenne pepper or to taste

1/4 Teaspoon ground Black pepper

1/2 Teaspoon Garam masala Powder

1 - 2 greenchillies (optional)

2 - 3 Tablespoons Grated Cheddar Cheese

2 - 3 Tablespoons Grated Parmesan Cheese

Handful of Parsley Chopped

Pinch of turmeric (optional)

Salt to taste.

Cooking Procedure

n 1. Pre-heat oven to 350 degrees. Spray a baking pan  with cooking spray.nn  nn 2. Heat a pan on medium heat. Add olive oil, half of the onions and chopped green chillies. When onions starts turning light red color add the ground meat,  ginger and garlic paste, turmeric, redchilli, cumin & coriander powders, and garam masala, mix well and cook on low heat.nn  nn 3. While the meat is browning, slice zucchini lengthwise and scoop out pulp. Set pulp aside and place zucchini boats in your baking pan. Spray or brush oil and sprinkle some salt and black pepper on each zuccini.nn  nn 4. Chop your zucchini pulp into bite size pieces. nn  nn 5. Add tomatoes, zucchini pulp, to the cooking meat.nn  nn 6. Cook well till all the water evoporates and the meat is well cooked.nn  nn 7. Switch off the heat and add remaining onions, bell peppers, parsely and both the cheeses and mix well. nn  nn 8. Scoop a generous amount of this mixture into each zucchini boat.nn  nn 9. Bake for 30 - 35 mins. Add some extra parmesan cheese to the top of zucchini for the last 5 mins.nn  nn 10. Serve hotnn  nn Note: nn 1.You can increase or decrease the amount of meat, vegetables and cheese.nn 2. Vegetarians can use soy granules, tofu, paneer, sprouts,  cooked beans( red/ black/ garbanzo).nn  n
