Ingredients

1 Cup Soya Granules

2 Cups Chopped Mixed Vegetables (Carrots, Beans, Green peas, Potato, Red Capsicum etc)

1 Medium Onion Finely Chopped

2 Green Chillies

2 Tbsp Finely Chopped Mint Leaves

3 - 4 Tbsp chopped coriander leaves

2 Tsp Coriander Powder

1 Tsp Cumin Powder

1/2 Tsp Garam Masala (optional)

1 1/2Tsp Red Chilli Powder or as per taste

2 Tbsp Oil

Salt as per taste

1 Tsp ginger Garlic Paste

1/2 Tsp Turmeric

Water as required

Cooking Procedure

Boil soy granules  as per package directions (In microwave it will take 2-3 mins). Squeeze out the water and keep a side.

Heat a pan on medium heat, add oil. When the oil is ready, add the green chillies, onions. Fry the oinons till they are light brown. Lower the heat to medium low,  add the mint leaves, ginger garlic paste and turmeric. Saute for 30 secs.

Add the vegetables, coriander, cumin and red chilli powders. Saute for 2 mins.Now add the soy granules, salt and mix well. Allow it to cook for 2 mins. Add 1/2 cup water, cover it and cook till all the vegetables are cooked. Adjust water as required.

Add garam masala, mix well. Cook for 2 more mins. If any  excess water remains in the curry, increase the heat to medium high and cook till all the water evaporates. Add chopped coriander, switch off the stove. Serve hot with rice or chapathi.
