Ingredients

2 cups Whole wheat flour

1 teaspoon salt( adjust as per taste)

3 tablespoons oil

3/4 cup water

1 cup whole wheat flour for dusting

1/2 cup grated zucchini

1/2 cup grated carrot

1/2 cup grated cabbage

1 tablespoon chopped coriander/cilantro leaves

1 tablespoon chopped mint leaves

1 teaspoon redchilli powder( adjust as per taste)

1/2 teaspoon garam masala

1 teaspoon coriander powder

1 teaspoon carom seeds(vaamu)

1/2 teaspoon ginger garlic paste

Cooking Procedure

n 1. Squeeze out excess water from grated zucchini and cabbage.n 2. In a large bowl mix all the grated vegetables and chopped coriander and mint leavesn 3. Add red chilli powder, garam masala, coriander powder, carom seeds, ginger garlic paste and salt, mix all the ingredients very well.n 4. Add 2 cups of whole wheat flour to the mixture and mix well.n 5. Add  Water a little at a time to form a medium soft dough. knead it for 2 more mins.n 6. Add few drops of Oil and knead the dough. Cover and let it rest for 15- 20 minutes.n 7. Heat Tawa or skillet on medium heat.n 8. Knead the dough again for 2 mins and divide into large lemon size balls.n 9. Start rolling the balls into rotis by adding dry whole-wheat flour.n 10. Place the prepared roti  onto the hot tawa, turn the roti over when you see bubbles appear on the surface.n 11. Apply oil on the surface and let it cook for  few seconds, flip again and apply oil to the other surface.n 12. Press on the edges with a spatula and cook till both the sides are well cooked. It will just take around 1 to 1.5 mins each side to cook.n 13. Serve hot with raita.n  n
