Ingredients

1 Pound Kakarakaya (Bitter Gourd)

Salt as required

1 Teaspoon Redchilly Powder

1/4 Teaspoon turmeric Powder

1/2 Teaspoon Cumin Powder (optional)

1 Teaspoon Coriander Powder (optional)

1 Tablespoon Dry Coconut Powder

1 Teaspoon Jaggery (optional)

2 Tablespoons Oil

Cooking Procedure

n 1. Peel the bitter gourds, wash and cut them  into thin round slices.nn 2. Add around 1 teaspoon salt to bitter gourd pieces and mix well and keep a side for 30 mins. nn 3. After 30 mins, Sueeze out the water from bitter gourds.nn 4. Heat a nonstick pan on medium heat, add oil, when its ready add bitter gourd pieces.nn 5. Reduce the flame to medium low, cover it and cook for 10 mins, stirring in between.nn 6. Now cook without lid till bitter gourd turns a bit crispy.nn 7. Add turmeric, red chilly powder, cumin and coriander powder, dry coconut powder, salt and jaggery. Mix well and fry for around 5 mins on low heat.nn 8. Serve hot with rice and sambhar/ dal.nn Note: This dish should be cooked on medium low heat only.nn In step 2 bitter gourds can be kept aside for 1 hour also, to completley remove the bitterness from the vegetable. But retaining a little bitterness gives health benefits.n
