Healthy Pasta

Ingredients

1 Cup Multi Grain or Whole Wheat Pasta

2. 5 to 3 Cups Chopped Mixed Vegetables (Carrots, Zucchini, Broccoli, Red and Green Bell Peppers)

1/2 Cup Onions

1 Teaspoon Chopped Garlic

1 Tablespoon Olive Oil

3 Tablespoons Tomato Sauce

1/2 Teaspoon Dried Basil Leaves

1 to 2 Tablespoons Grated Parmesan Cheese

Less Than 1/2 Teaspoon Black Pepper Powder or to taste

Salt To taste

1/2 Avocado cut into small cubes

Cooking Procedure

n 1. Boil the pasta according to package directions. When the pasta is almost done add the broccoli florets in the pasta, cook for 2 mins. Take around half cup of pasta water  and drain the pasta and broccoli.nn 2. Meanwhile, Chop the other vegetables into desired size.nn 3.Heat a pan on medium heat, add oil, when the oil is hot, add the garlic and saute for 5 - 7 secs. Then add the onions, fry till they become translucent.nn 4. Now add the chopped vegetables, saute for 2 mins. Add around 1 tablespoon of pasta water, cover and cook till the vegetables are half cooked.nn 5. Add the tomato sauce and cook for 2 more mins. Now add the cooked pasta along with broccoli.nn 6. Add dried basil leaves, salt & pepper and around 2 tablespoons of pasta water, Cover and cook till all the vegetables are well cooked.nn 7. At the end add 1 tablespoon of parmesan cheese, and mix.nn 8 Serve hot topped with avocado pieces and grated parmesan cheese.nn  n
