Ingredients

1 medium sized cauliflower cut into small florets

1/4 cup fresh fenugreek leaves finley chopped

1/4 cup fresh coriander/cilantro leaves finely chopped

1/4 cup finely chopped green onions (only green part)

1 cup chopped onions

3 - 4 green chillies very finely chopped or crushed

1 teaspoon grated ginger

1/4 teaspoon turmeric

salt to taste

2 - 3 tablespoons olive oil

Cooking Procedure

n 1. Heat a wide pan on medium heatnn  nn 2. add oil, next add the onions and fry till onions become translucent.nn  nn 3. Reduce the flame to low, add the green chillies, ginger and turmeric, fry for 30 secs.nn  nn 4. Add the  fenugreek leaves, green onions, coriander leaves and fry for 1 min.nn  nn 5. Add the cauliflower florets and mix well. Increase the heat to medium, cover and cook for 8 - 10 mins, mixing in between. nn  nn 6. add the salt at the end, mix well and turn off the stove.nn  nn 7. Cook the cauliflower till 90% done. A little crunch enhances the flavor.n
