Ingredients

1 cup urad dal (black gram)

1/2 cup grated carrot

1/4 cup Walnuts

1/4 cup finely chopped onions

1/4 cup chopped coriander, mint and curry leaves (all together)

Salt as per taste

1/2 teaspoon ginger garlic paste

4 green chillies or as per taste

Oil for deep frying

2 tbsp rice flour (optional)

Cooking Procedure

n 1. Soak Urad dal in 5 - 6 cups of water for 6 - 8 hoursnn 2. Grind together urad dal, Walnuts,  green chillies, ginger garlic paste. Do not add more than 2 tbsp of water while grinding. Grind the mixture a  little coarse ,  not  to a very fine paste. nn 3. To the ground mixture, add onions, carrot, coriander, mint and curry leaves and salt. If the mixture is loose, add little rice flour.nn 4. Heat oil in a kadai on medium heat.nn 5. Vadas can be made on the palm or plastic paper (ziploc bag).nn 6. Apply very little water to the palms/ plastic paper, make a round shape with your hands running through the edges. Flatten it and make a hole in the centre.nn 7. Drop the vada into the oil. Deep fry them in hot oil until they are golden brown.nn 8. Serve them with sambhar or any chutney. Also tastes good with Tomato ketch up.n
