Healthy whole wheat carrot muffins.

Ingredients

11/2 Cups Whole Wheat Pastry Flour

2 Eggs

2/3 Cup Oil

3/4 Cup Sugar

1Tsp Vanilla extract

11/4 Tsp Baking Powder

1 Tsp Cinnamon Powder

1/2 Tsp Salt

11/2 Cups Grated Carrots

11/2 Cups Coarsely chopped Walnuts

1/2 Cup Raisins

8 Ounce Fat Free Cream Cheese

1/4 Cup Butter

1 Cup Powdered Sugar

1 Tsp vanilla Extract

Cooking Procedure

n 1 .In large bowl, combine eggs, oil, sugar and vanilla. Mix very well. nn 2. Combine flour, baking soda, cinnamon and salt. Sieve this mixture into another seperate bowl.nn 3. Add dry ingredients to egg mixture, mixing very well . Fold in carrots, walnuts and raisins.nn 4. Preheat oven to 350 degrees.  Scoop batter into standard-size muffin tins that have been sprayed with oil. Bake in preheated oven 20 - 25 minutes. Test with help of a toothpick, muffins are done when the tooth pick comes out clean when pierced in the muffin.nn 5. Allow the muffin  to cool completely and remove from tins.nn 6. Decorate with cream cheese frosting and serve.nn  Cream Cheese Frosting:nn 1. Cream together cream cheese and butter with the help of a spoon, when its creamy add one teaspoon vanilla essence and mixnn 2. Add the powdered sugar amd mix well. Store it in refrigerator.nn Tip : Indian whole wheat atta flour can be used instead of whole wheat pastry flour.nn  nn  n
