Bell peppers are very rich in vitamin C and vitamin C helps in the absorption of iron from eggs.

Ingredients

3 eggs

mixed color bell peppers or any one bell pepper

salt and pepper to tatse

2 teaspoons olive oil

Cooking Procedure

n 1. Cut  the bell peppers into 1/2 inch thick rings (3 rings are enough), and remove the inner white part.nn 2.  Heat a skillet on medium heat, and add olive oil. Place the bell pepper rings, saute for 15 secs and flip them.nn 3. Now crack an egg into each bell pepper ring. Reduce the heat to medium low, cover with a lid  and cook for 8 - 10 mins, till the egg becomes firm.nn 4. Sprinkle salt and pepper on top and serve hot.nn Note: You can flip the egg and cook both sides but the appearance will be lost.n
