This is one quick and easy stir fry recipe with cucumber and shrimp which I prepared last night for dinner. My daughter is so fond of seafood , I have to keep at least one meal a day with fish or a combo of the same. So I keep on experimenting new combinations , this time I made an attempt with cucumber and everybody liked it :-)

Ingredients

3 large cucumber,peeled and cut into small cubes

10 to 12 medium sized shrimps

1 medium onion, finely chopped

1 tsp cumin seeds

1 tsp ginger paste

1/2 tsp turmeric powder

1 tsp coriander powder

1 green chili, slit lengthwise

1/2 tsp veg masala powder (optional)

Salt, as required

Oil, as required

Cooking Procedure

n n Deshell the shrimp, keep marinated with a pinch of salt and turmeric for 10 minutes. Pan fry and keep aside.n n In a wide bottomed non stick skillet, heat a tbsp of oil, add the cumin seeds, once it starts to sputter  add the ginger paste and fry for a minute or so.n n Next add onion and chili and fry till translucent, then add turmeric, coriander powder and veg masala powder and fry for 2 minutes or until the raw smell vanishes.n n Next add cucumber and salt, mix well with the spices, cook covered for 5 to 7 minutes.n n Lastly add the fried shrimp, cook for another minute or until all the flavors blend well.nn
