Soya Spinach Curry

Ingredients

2 Medium Sized Cups Soya Chunks

9 Medium Sized Cups Chopped Spinach

3 Medium Sized Onions Cut sliced

1 Tea Spoon Red Chilly Powder

Salt to taste

3 Green Chillies sliced into two pieces

1/4 Tea Spoon Turmeric

1.5 Tea Spoon Ginger Garlic Paste

2.5 Table Spoons Oil

Cooking Procedure

Boil 1 Ltr Water in a Container. Clean the Soya Chunks in water and add them to the boiling Water to cook for 10 minutes on medium heat.

Take off the heat and separate Soya Chunks from water and keep aside to cool.

Squeeze Soya Chunks to remove excess water. Water in Soya Chunks can spoil taste of the curry.

Heat Oil in a pan and fry Green Chilly, Onion until Onion turns golden brown. Add Ginger Garlic paste, Turmeric, Soya Chunks, Red Chilly Powder, Salt and mix well. Cook on low heat for 6-8 minutes.

Add Spinach to the cooking Soya Chunks and cook on medium heat until Spinach is well cooked. Take off the heat when the water in curry is absorbed, increase the heat if there is excess water.nnn Soya is high protein food and is considered to lower bad cholesterol. Health benefits increase with Spinach.
