Long Brinjal Fry

Ingredients

1/2 Kg Long Brinjal Cut into Vertically Long Pieces

2 Tea Spoons White Gram (Minapappu)

2 Tea Spoons Chana Dal (Senaga Pappu / Pigeon Peas)

1 Tea Spoon Coriander Seeds

1/2 Tea Spoon Cumin Seeds (Jeelakarra )

1/2 Tea Spoon Fenugreek Seeds

5 Medium Sized Red Chillies

1/2 Tea Spoon Salt

1/4 Tea Spoon Turmeric

3 Table Spoons Oil

Cooking Procedure

Heat1/2 Tea Spoon of Oil in a pan and fry White Gram, Chana Dal, Coriander Seeds, Cumin Seeds, Fenugreek Seeds, Red Chillies. Transfer the mixture into a tissue paper for the oil to get absorbed.

Grind this mixture to powder and keep it aside for later use.

Add remaining oil in a fresh pan.

Add cut long pieces of Brinjal to the hot oil and let it cook on low heat.

After the Brinjal is half cooked add Turmeric and Salt.

After a while add the ground powder to the pan and mix well.

Cook on low heat until Brinjal is well cooked.
