Carrot Fry

Ingredients

5 Big Carrots

4 Red Chilies broken into 2 Pcs each

1 Table spoon Oil

1 Tea Spoon Minapappu (Urad Dal)

1 Onion chopped into small pieces

8 Garlic Cloves Sliced into vertical pieces

1/2 Tea Spoon Cumin Seeds (Jeera)

1/2 Tea Spoon Mustard Seeds (Avalu)

6 Curry Leaves chopped into small pieces

1 Tea Spoon chopped Coriander Leaves

1/4 Tea Spoon Turmeric

1/2 Tea Spoon Salt

Cooking Procedure

Boil the Carrots in a bowl filled with water until they are well cooked.n n Peel off the outer layer from cooked carrot and make them into small pieces.

Heat Oil in a pan and add Cumin Seeds, Mustard Seeds, Red Chilly, Curry Leaves, Onion, Garlic pieces and mix well.

After 2-3 minutes add Minapappu (Urad Dal) to the mixture.n n After Onion turns golden brown add Turmeric, Carrot pieces, Salt and mix well.

Cook it for 10 minutes on low heat while mixing the ingredient once in a while.n n Garnish with Coriander Leaves & take off the heat.
