About Recipe

Once in a while, I like to have a good potato recipe that fits the definition of comfort food. There is just something wonderfully comforting about roasted potatoes, isn’t there? The starch has something to do with it. Personally, I just love the hearty taste of potatoes. My favorite is the red potato, but, I am an equal opportunity devourer of potatoes.

Ingredients

Cilantro

Extra Virgin Olive Oil

chick peas from can (skins removed)

uncooked quinoa

salt

whole peppercorns

lemon juice (or to taste)

Jalapenos or Thai Chili

water (optional)

medium sized potatoes
