Dahls are a great, filling way to get a nutritious and tasty meal. I love dhal, and make them regularly as a side to go with any curry I have at home. However, this evening I felt like making a dhal and mixing it with delicious, oven roasted vegetables to enjoy as a main meal. If you also love dhal’s you’re bound to enjoy this dish! This dhal is thick and wholesome, so you could quite easily enjoy it alone. Tonight I wanted to enjoy this with brown rice, so I served it with that. The good thing about this recipe, is that it makes quite a large quantity, so it makes a great dish to enjoy with friends, or make to have leftovers that you can save for in later in the week when you’re in need of a quick dinner!
