About Recipe

I decided to create this warming salad today, combining sweet potatoes and parsnips as sweet root vegetables instantly make me think of autumn. As the seasons change, this dish just seemed appropriate. I love the soft-crisp contrast you get when roasting vegetables, especially with sweet potatoes. To top off this salad, I also sprinkled it with pine nuts for a rich and creamy taste, tying all of this dish’s flavours together. Delicious! You could easily enjoy this as a main, side or appetiser.
