I love overnight oats. Although it may seem a bit eager to prepare your breakfast the night before eating it, it does save a lot of time in the morning. You then also get to enjoy a bowl of something that’s really delicious. When I make my overnight oats, I like to combine a few flavours that I think really compliment each other. So, with this recipe I went for a citrusy/tropical theme. Mixing orange, lime and dried apricots give a really nice fresh taste, and adding orange zest gives a very light zingy bitterness. The apricots also plump up from the fruits juices giving a sweet, soft texture.
