Team DFT created magic this week. “Unfrying the Fried Snacks” was the challenge and it was well received! Generally we associate ‘bonda‘ with a snack involving potato based filling, dipped on gram flour batter and deep-fried. This is a popular snack in south India eaten as is, as also northern India, eaten as ‘Vada-Pav‘ with this dumpling sandwiched in a roll (bread).

Ingredients

whole mung bean or green gram

finely chopped red onion

finely chopped fresh coriander

chopped green chili

red chili powder (optional)

turmeric powder

lemon juice (or 1/2 teaspoon of chat masala)(you can even use both if you prefer, but first taste the mixture, then add)

salt

water

gram flour (besan)

soy flour

red chili powder (adjust to taste)

asafoetida (hing)

turmeric powder (optional)
