This One Pot Shrimp Scampi with Zucchini Noodles makes a tasty and healthy dinner. The shrimp are cooked in a buttery, lemon-garlic sauce and then combined with zoodles.

Ingredients

3 tbsp. butter divided

2 tbsp. olive oil

4 garlic cloves minced

1/2 cup white wine your favorite kind

1 lb. shrimp peeled and deveined

1/8 tsp. red pepper flakes

1 tsp. salt or to taste

1 tsp. pepper or to taste

1/4 cup chopped parsley

2 tbsp. lemon juice

Grated Parmesan to garnish

Cooking Procedure

n n n In a large, heavy-weight skillet, melt one tablespoon of butter with the olive oil, and then add the garlic. Sauté until fragrant, about 1 minute.n n n n Add the wine and bring it to a simmer. Let the wine reduce by half, about 2-3 minutes.n n n n Stir in the shrimp, and season them with salt, pepper, and red pepper flakes. Sauté until they are cooked through, about 2-4 minutes depending on the shrimp size.n n n n Add the remaining butter, parsley, and lemon juice. Stir.n n n n Add the spiralized zucchini and cook for 2-6 minutes, depending on personal preference.* Taste for salt and add more if needed.n n n n Garnish with grated Parmesan.n nn
