This is a healthy breakfast or snack option.

Ingredients

2 Eggs

2 Tea Spoons Finger Millet Powder (Ragi)

1 Tomato

1 Tea Spoon Chopped Coriander

1 Green Chili Chopped

1 Table Spoon Finely Chopped Onion

1 Table Spoon Olive Oil

Touch of Turmeric Powder

1/4 Spoon Ginger Garlic Paste

Salt & Red Chili Powder to Taste

1 Table Spoon Water

Cooking Procedure

Chop Tomatoes and sauté them in Olive Oil.

While Tomatoes are cooking, mix Chopped Onions, Coriander, Green Chili, Turmeric Powder, Ginger Garlic Paste, Salt & Red Chili Powder, Finger Millet Powder in a bowl. Break the eggs and add them to the mixed ingredients along with 1 Table Spoon of Water. Take cooked tomatoes, add them to the Egg bowl and mix well.

Heal oil in the pan and spread egg mix across the pan, let it cook on very low heat. Take off the heat when Omelette is cooked to your taste on both sides. Serve hot.

Note: You could even cook Ragi powder in water for a while if you prefer well cooked Ragi over raw powder. Back to step 2 to add cooked Ragi.
