These could be my favorite bars ever. First of all, they’re super EASY. No chilling them, rolling out the dough, or cutting them out with cookie cutters like you have to do with regular sugar cookies. Just press the dough gently in the pan, bake for 10 minutes, and frost! EASY. Second, they are super SOFT, chewy, and basically melt-melt-in-your-mouth. My husband would request these as his birthday cake if I let him. (I have a strict “cake only” rule when it comes to birthdays–I know it’s selfish. I just love making and decorating cakes too much). But I’m happy to make these Sugar Cookie Bars for him on ANY other occasion. And they don’t last long.
