Dum Aloo is an exotic and popular North Indian gravy dish. This recipe requires simmering the baby potatoes in its gravy for hours on low flame. This dish can be served with Rice/Naan/roti/Indian bread of choice. "Dum" is a process of cooking the contents of a pot (usually handi or similar) on low flame for hours. Traditionally this pot is sealed with dough which helps trapping the steam inside and using it to cook the food. This process imparts an amazing flavor to the dish. Dum cooking is widely used in making Biryani.
