So, this upcoming June, 2015, my husband and I will be married for (gulp) 29 years! most Fridays, for the past 29 years, my husband and I have shared a plate of nachos and a movie. It’s a fairly sacrosanct night. Most of our friends and family know of ‘Nacho Night’. My kids LOVE ‘Nacho Night’ because they are in command of their own dinner that night.

Ingredients

1/2 lb ground turkey or chicken 1 TB Taco Seasoning (recipe below) 1/4 cup water 1 1/2 - 2 cups of Refried Beans (recipe below) 2 scallions, sliced 2 roma tomatoes, diced 1 avocado, cubed 2 cups shredded lettuce 2 cups grated cheddar or colby jack cheese 1 2oz can of sliced olives

Cooking Procedure

n Instructionsnn n Brown meatn n Once browned, add seasoning and water and stir to mixn n Cook on medium until liquid is evaporatedn n If using cold refried beans: spread refried beans on the bottom of a microwave safe plate and cook on high for 1 minute. Take out of microwave and stir beans well, then spread them flat again. cook on high in microwave for another 1 1/2 minute.n n If you are using hot refried beans,: spread on the bottom of microwave safe plate.n n Spread 1 cup of cheese on top of hot refried beans and thenn n Spread ground meat on top of cheese and then add another layer of 3/4 cup shredded cheese on top of meat and microwave for 1 minuten n Sprinkle lettuce, tomato, scallions, avocado and black olives over meat.n n Top with remaining cheese.n n Serve with corn chips. We have found through our 29 years of experimentation that the round or triangular chips work better than the scoops. Utz makes a Baked Tortilla Chip that is our go to chip because of the reduced fat.nn
