I have been interested in Japanese cuisine for a very long time. I have found the exotic ingredients and techniques appealing ever since my first sushi experience as a child. This fascination carried on with me when I studied Japanese in high school. Although my pursuit of the Japanese language faded, my love and respect for Japanese cuisine has only grown, whenever I have an opportunity to incorporate Japanese ingredients into my cooking I take it. It is because of this interest that led me to discover how natural chocolate and shiso are in combination.
