Ingredients

2cups basmati rice/sona masoori rice.

2tbsp oil.

1cup chopped vegetables of ur choice.

4 cloves.

1 inch cinnamon stick.

4 cardamoms.

2 bay leaves.

1tbs ginger garlic paste.

1/4tsp turmeric.

salt to taste.

1/2cup onions,thinly sliced.

4green chillies,vertically sliced.

1/2tsp gharam masala.

1tbsp lime juice.

fried cashewnuts and onions.(optional).

1/2cup chopped coriander and mint leaves.

1/2tsp shahijeera.

Cooking Procedure

n 1.Heat oil,add cloves,cinnamon,bay leaves,cardamom and shahijeera.nn 2.Add onions and fry till they get light brown colour.nn 3.Add green chillies,ginger garlic paste.(freshly ground paste enhances the taste and flavour.),fry it for 30sec.nn 4.Add salt,turmeric,gharam masala and coriander,mint leaves.nn 5.Now add chopped  vegetables like beans,capsicum. green peas,corn and grated carrot.nn 6. cook on low heat for a while.nn 7.Add water,for 2cups rice add 4 cups water and let it boil on medium high heat.nn 8.Add rice(rice should be soaked in water for atleast half hour and drained.)nn 9.Add lime juice and finally adjust salt.nn 10.cook this on medium flame till 90% of the water is absorbed and then cook on low heat,covering with a lid.nn 11.finally add fried onions and cashewnnuts on the top if u like.nn 12.serve with chicken or aloo kurma or raita.nn  n
