Ingredients

1 cup chana dal.

1 big onion.

4 to 6 green chillies or as per taste.

10 chopped curry leaves.

1/2 tsp grated ginger.

1tsp ginger garlic paste.

3 red chillies.

1/2 tsp cinnamon pieces.

salt to taste.

1 tsp cumin seeds.

1/4th cup chopped coriander leaves.

oil.

1/2 tsp each cumin and mustard seeds.

pinch fenugreek seeds.

1/4th tsp turmeric.

1 tbsp coriander powder.

1 tsp cumin powder.

2 tsp chilli powder.

3 cups tamarind water or soak one big lemon size tamarind in water

Cooking Procedure

n Step 1: Vada preparation;nn 1.Soak chana dal in water for atleast 5 hours and drain water.nn 2.Add red chillies,cinnamon,ginger,cumin seeds,salt and grind to a coarse paste.nn 3.Add very little water if necessary.To this paste add half of chopped onions,green chillies,chopped coriander leaves and curry leaves.nn 4.Heat oil in a pan.Make small balls and flatten them to small patties with palm and fry them in oil till they attain golden brown color.nn Step 2: curry preparation:nn 1.Heat  2tbsp oil in a seperate pan.add cumin,mustard and fenugreek seeds.nn 2.Add onions,green chillies,curry leaves and fry them.nn 3,Add turmeric and ginger garlic paste.nn 4.Add coriander,cumin and chilli powders and add little water if necessary to avoid masala powders from burning.nn 5.Add previously fried vada.pour tamarind water ,add salt.nn 6.Cover and cook in medium flame till desired consistancy is obtained.nn 7.Add chopped coriander leaves and serve hot with rice.nn NOTE: Switch off the flame when the consistancy is little thinner than the required,because it gets thicker by the time u serve as the vada absorbs it.and add little less salt in vada.n
