Ingredients

one bunch gongura leaves.

one pound lamb/mutton.

8 green chillies.

2tsp chilly powder.

1tsp curry or sambarpowder.

one cup chopped onions.

salt to taste.

3 tbsp oil.

1tsp chopped coriander leaves.

1/2tsp each cumin and mustard seeds.

one red chilly.

5 to 10 curryleaves.

Cooking Procedure

n  nn Step 1:nn 1. Wash gongura leaves ,add half cup onions,6 green chillies,1tsp chilly powder,1/2tsp sambar powder.nn 2.To this add 1/2 cup water and cook till all the water gets absorbed.nn 3.once it is done add salt,smash it and keep aside.nn Step 2:nn 1.Clean mutton pieces thoroughly and to this add chillies,remaining onions,chillypowder,nn sambar powder ,salt and one tbsp oil and cook on medium flame.nn 2.After 5min add 1/2cup water and cover and cook.nn 3.Cook till all the water gets absorbed.this step can also be done using pressure cookernn .nn n Now mix both step 1 & 2 and check the taste and add salt if required.n n Keep a separate pan on stove ,heat 2 tbsp oil  ,add red chilly,cumin,mustard seeds,curry leaves.n n add onions if u like ,add the above mixed one to this and leave it for 2 to 3 mins.n n switchoff the flame and sprinkle coriander leaves..nnn Note: For sambar powder recipe,u can see my recipies list or u can directly add coriander, cumin powders and turmeric.n
